LORI’S CAESAR SALAD WITH GRILLED CHICKEN

What to Buy:

1 Lori’s Original Sauce package
1 250ml sour cream tub
1 jar regular mayonnaise
1 tsp. granulated garlic (optional, but oh so good)
1 romaine heart for small salad
2 romaine hearts for large salad
1 package of croutons
grated parmesan cheese
Chicken Breast (optional if you want to make a chicken caesar)

Directions:
How to Make an Amazing Caesar Salad Dressing

In a resealable container, mix entire packet of Lori’s Original Sauce
with 250ml sour cream and 1/2 cup mayonnaise and let sit in fridge while
you chop romaine.
Optional: If you like you caesar salad extra garlicky,
mix 1 tsp of the granulated garlic into the dressing.

Grilling Chicken:
BBQ: brush chicken breast with vegetable oil and sprinkle with pepper
and granulated garlic.
Skillet: fry chicken breast in a skillet with vegetable oil and
sprinkle with pepper and granulated garlic.
Once fully cooked, set aside and let rest.

Chop romaine into bite size pieces and wash. DRY romaine or spin in a
salad spinner to get all of the water off so that the salad dressing will stick to it.

In a large salad bowl, spoon in some of the caesar dressing that you just made
(this will be your own preference of the quantity of dressing you like on your salad.)

Add chopped romaine and croutons and toss all together with your home made caesar
dressing. Slice the chicken breast into strips and arrange it on the top of your
freshly tossed Caesar Salad. Sprinkle with a generous portion of parmesan cheese.

PAN FRIED SALMON

This is one of my go to dinners when I am looking to make a dinner that is healthy, quick and easy. Not only is this meal all of that, it is also so delicious and the kids will love it too. Once you get the hang of pan frying fish and realizing how quick and simple it is, you are going to be making this meal all of the time.

Ingredients

1 30g Package of Lori’s Original Sauce
1 500ml tub Sour Cream
4 Salmon Filets
2 Bell Peppers (Red & Yellow) Julienned
3 Carrots julienned
1 bundle Asparagus
6 tbsp Butter
2 tbsp Honey
2 lbs Nugget Potatoes
2 tsp Salt
1/4 Oil (Olive or Canola)
4 tsp Garlic (granulated)
4 tsp Black Pepper
2 lemons (cut into wedges)

Directions

Prepare Lori’s Original Sauce by mixing the entire 30 gram pouch into the 500ml sour cream tub. Cover and refrigerate until ready to use.

  1. Wash your nugget potatoes, bell peppers, asparagus and carrots.
  2. Cut bell peppers and carrots into julienne style strips and prepare asparagus by cutting the woody end off and throw out.
  3. Boil nugget potatoes in a pot of salted water
  4. While your potatoes are boiling start pan frying your julienned veggies in 2 tbsp oil.
  5. Wash and dry salmon filets and season generously with garlic and pepper. Season with salt to your liking.
  6. Heat 6 tbsp oil in a large skillet on med-high heat and gently place salmon filets into pan and once placed, do not move until you are ready to flip over.
  7. VERY IMPORTANT look at the sides of your salmon filets and see the colour change as the salmon cooks. You will know when it is time to flip your salmon over when you can see the colour change 1/2 way up the side of the salmon.  REMEMBER all fish cooks very quickly so you will want to watch it carefully so you do not over cook it. You can also take a fork and pull the filet apart and if if flakes apart easily, it is done.
  8. Toss your veggies in the butter and honey
  9. Prepare your plate by placing the beautiful salmon filet beside the nugget potatoes and honey buttered veggies.
  10. Squeeze a large lemon wedge over the entire plate.
  11. NOW FOR THE CROWNING GLORY…..spoon Lori’s Original Sauce over the top of the salmon filet for the most delicious, healthy meal that the entire family is going to enjoy. The kids won’t be able to stop eating this meal and they will want some more of Lori’s Original Sauce with every bite.

SPAGHETTI & MEATBALLS

What to Buy

  • 1 pkg. Lori’s Mediterranean Meat Seasoning
  • 1 – 2 lbs ground meat (beef, chicken or turkey)
  • 6 tbsp olive oil
  • 1 package spagettini or angel hair pasta
  • 2 cans tomato sauce
  • 1 can diced tomatoes
  • 1 can crushed tomatoes
  • 1 large onion
  • 1/2 Cup Red Wine
  • 3 tbsp dried oregano
  • 2 tbsp dried basil
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tbsp dried parsley
  • 2 bay leaves
  • 1/2 cup red wine Parmesan Cheese

Directions:

Mix whole 30g package of Lori’s Mediterranean Seasoning with 1 – 2lbs ground meat of your choice and form little meatballs. Cover baking sheet with parchment paper and arrange meatballs on baking sheet. Bake in 350 oven for 25 – 30 minutes.

In large soup pot, sauté diced onions with 3 tbsp. olive oil. When onions are cooked down add all of your dried spices (oregano, basil, cinnamon, nutmeg, parsley, bay leaves) and stir in with your onions so the heat will help release the flavours of the spices. Add tomato sauce, diced tomatoes, crushed tomatoes and red wine. Let simmer for 1/2 hour. Add meatballs into the sauce once they are completely cooked in the oven.

Cook Spagettini according to package directions. Tong pasta into a large serving bowl and drizzle with remaining olive oil. Spoon your delicious meatballs and sauce over the pasta, sprinkle with parmesan cheese and serve. Serves 4 -6 people.

LORI’S DONAIR MEATLOAF

Preheat oven to 375 degrees. Blend entire package of Mediterranean Seasoning Mix into 2lbs of your favourite ground meat. Once thoroughly mixed together, press into a loaf pan and bake for 30 minutes or until juices run clear. Let stand for 10 minutes. Slice thinly and serve alone or in a Donair. Optional: fry slices of meatloaf in a pan with butter until a little crispy (Serves 8)

Ingredients to Make a Donair

Thin slices of meat loaf made with Lori’s Mediterranean Seasoning (buy 2lbs ground beef, chicken or turkey)
Lori’s Donair Sauce (Original – buy 500ml sour cream) (Sweet – buy 1 can evaporated milk – Pacific or Carnation brand)
Your Favourite Flatbread or Pita
Lettuce, Tomato, Cucumber and Onion
Feta or Shredded Cheddar/Mozza cheese

Wrapping it up

On a square sheet of wax paper or tin foil lay a warm flatbread with 3-4 slices of Donair Meatloaf and a generous portion of Lori’s Donair Sauce. Add your choice of veggies and cheese. Wrap it up and enjoy!

LORI’S DONAIR SOUP

This is such an easy soup to throw together and one of those soups you will just love to come home to. It’s hearty, tastes great and pairs perfectly with a nice garlic bread. A great way to use up left over meatloaf or burgers that have been made with Lori’s Mediterranean Meat Seasoning, just chop them up and use in this soup. It’s just so flavourful, healthy and hearty, your family will rave over it. So, come on home, throw your comfy clothes on and curl up on the couch to your favourite TV show with this heart warming soup in hand.

INGREDIENTS:

  • 1lb ground beef, chicken, turkey or left over meatloaf
  • 1 cup diced onions
  • 3-4 tbsp. Lori’s Mediterranean Meat Seasoning
  • 1/8 cup dried parsley
  • 3 tsp. pepper
  • 2 tsp. salt
  • 2 tsp. thyme
  • 2 bay leaves
  • 1 large can diced tomatoes
  • 2 cans tomato soup
  • 1 cup diced carrots
  • 2 cups diced potatoes
  • 3 cups chopped green cabbage
  • 3 tetra packs beef broth
  • 1/2 cup barley
  • Garlic Bread

DIRECTIONS:

  1. In a large soup pot add 4 tbsp. oil and brown ground beef. Drain fat after browned.
  2. Stir diced onions into meat and let soften for approx. 2 minutes.
  3.  Add Lori’s Mediterranean Meat Seasoning, Bay Leaves, Thyme, Salt, Pepper & Parsley to your meat and onions.
  4. If using left over meatloaf or patties, break up into small pieces and add.
  5. Add the rest of the ingredients to the pot and simmer for 1 hour.
  6. Serve soup with Garlic Bread.

LORI’S DONAIR PIZZA

This is a fun and delicious pizza the whole family will love to eat and prepare!  You will be able to create this “Famous Donair Pizza” that donair lovers and kids rave about by using Lori’s Mediterranean Meat Seasoning and Lori’s Donair Sweet Sauce mix.  Just follow these simple instructions to bring home the flavours of Lori’s Donair and make this Famous Donair Pizza.

What to Buy:

  • 1 packet Lori’s Mediterranean Meat Seasoning Mix
  • 2 packets Lori’s Donair Sweet Sauce Mix
  • 2 lbs ground meat of your choice (I recommend 1 lb ground beef and 1lb ground chicken)
  • 1 can evaporated milk (I prefer Pacific or Carnation brand, they have the best flavour)
  • 2 pizza shells or pizza dough of your choice
  • 1 large red or white onion
  • 4 roma tomatoes
  • 1 lg bag shredded cheddar/mozza cheese (you will need approx. 4 cups shredded.
  • 1 tsp red pepper flakes
  • 1 tsp dried oregano
  • Optional: any other veggies you prefer, bacon pieces or pepperoni.

Directions:

  • Pre-heat oven to 375.
  • Split packet of Lori’s Mediterranean Meat Seasoning in half and add 1/2 packet to 1lb ground beef and 1/2 packet to 1lb ground chicken.  Mix in very thoroughly by hand ensuring the seasoning gets into all of the ground meat.  Form each ground meat mixture into a meatloaf shape and place on a baking sheet lined with parchment paper.  Bake for 20 min or until juices run clear.  Take out of the oven and let rest for 5 minutes before slicing thin.
  • Pour entire packet of Lori’s Sweet Sauce Mix into small bowl and mix in 6 tbsp evaporated milk.  Keep mixing until completely smooth. You can add 2 more tbsp. of evaporated milk if you like your sauce a little thinner.  Set aside.
  • Put pizza shells on a baking sheet or pizza pan and brush each shell with olive oil brushing right out to the the edges.
  • Slice your cooked meatloaves into thin slices and layer onto your prepared pizza shells.  I personally like 1 beef pizza and 1 chicken pizza.
  • Slice roma tomatoes thin, so they lay flat and then lay onto your pizza.
  • Slice onions thin and layer onto the pizza according to your personal taste.
  • Sprinkle shredded cheese all over the top going right out to the edges (I personally like it when the cheese goes over the edge a bit and gets nice and crispy)
  • Sprinkle red pepper flakes and oregano onto each pizza according to your taste.
  • Bake pizzas for approx, 20 -25 min. Cheese should be bubbly and starting to brown a little at the edges.
  • Drizzle cooked pizzas with 1/2 of the Sweet Sauce you prepared earlier.  Use the other 1/2 of the sweet sauce for dipping your crusts…….so Delicious!!
  • If you want an optional pizza crust dip, try Lori’s Original Sauce mix for a savoury garlic dip.  You will need to buy 1 packet of Lori’s Original Sauce Mix and 500ml sour cream to make this dip.  Your family will be happy you did.

SUMMER BERRY SALAD

What to Buy:

  • 1 packet of Lori’s Sweet Sauce mix
  • 1 can evaporated milk (I prefer Pacific or Carnation brand, they have the best flavour)
  • 1 package baby greens of your choice
  • 1 romaine heart
  • 1 sm. pack strawberries
  • 1 sm. pack blueberries
  • 2  peaches or nectarines
  • 3/4 cup of toasted walnuts
  • 1 sm. cube feta (optional)

Directions: 

  • Empty packet of Lori’s Sweet Sauce into a small mixing bowl and add 6 tbsp of evaporated milk. Whisk together until completely dissolved and set aside.
  • Pre-heat oven to 350 and toast walnuts approx, 10 min.
  • Chop romaine and toss together in a large salad bowl with the whole package of baby greens.
  • Cut strawberries, peaches and/or nectarines into wedges and arrange on top of your greens.
  • Toss blueberries over the top.
  • Lightly cut up toasted walnuts and sprinkle over top of the greens
  • Crumble feta and sprinkle on top of greens (this is optional).  Drizzle Lori’s Sweet Sauce over the top of your beautiful summer berry salad and serve.  Keep some of the sauce on the side so your guests can add more if they like.
